I made another batch of Strawberry Shortcake since everyone seems to enjoy eating it so much. :)
Not counting chilling the berries, I can make and bake a Strawberry Shortcake in less than 40 minutes now... which is why I try to keep fresh berries on hand at all times for short-notice surprise guests. It's a perfect treat to serve.
I posted photos of the cake yesterday on Flickr and someone asked if it could be made into a vegan recipe. Well, the strawberries are already perfect (only sugar and water are added to them), add in a vegan vanilla cake, and top if off with either coconut milk whipped cream or vegan whipped cream and voilà! A perfect vegan treat.
I've been a lacto-ovo-vegetarian for over ten years, haven't eaten red meat since 1994, and I have a great respect for vegans. Speaking of which, please check out my sweet friend Melisser's fantastic blog The Urban Housewife for all kinds of great vegan treats. She rocks!!! |
